Frika is a Soča valley dish made of potatoes and cheese, cooked in a pan until the edges catch. Naming the restaurant after it is a statement of intent: the kitchen starts with what is close rather than with what is fashionable.
That means local ingredients first, Soča trout from the river in the valley below, and frika itself on the menu rather than in the story. It is read through contemporary Alpine and Mediterranean cooking, so it is not served as heritage.
Working with local suppliers keeps the supply chain short, which is a decision about how good the ingredients are on the day as much as anything else.
Alpine and Mediterranean, in one valley
Bovec sits where the Alps stop and the influence of the Adriatic begins, which is why the cooking reads both ways. Butter and cheese from the mountain, olive oil and fish from closer to the coast.
Soča trout comes from the river in the valley below the hotel, and frika, the potato and cheese dish the restaurant is named after, stays on the menu rather than only in the story.
The result is not fusion. It is what people in this valley have actually eaten, cooked with contemporary technique.

THE restaurant
98 rooms and suites, from a 19 m² superior double to a 60 m² two-bedroom suite. Every room includes the panoramic pool and the fitness area.
Frika Terrace
The terrace is the outdoor extension of the restaurant: the same kitchen and the same bar, with the Julian Alps in front of you instead of a wall.
It opens with the season and works for breakfast in the sun as readily as for a drink at the end of a day on the mountain.
